A talk with Julien Lucas

Who would you invite to your fantasy dinner party and why?
My wife and children. I enjoy sitting down with them at the table, listening to them and enjoying some fine wine. As work takes up so much of my time, any free time I get is spent with them – it's vital.
How would you describe your style of cooking?
I’m inspired by the terroirs of Luxembourg for which I have great respect and which I try to showcase, while putting the various skills learned from former mentors to good use. Our guiding principle at La Villa is: terroir/produce/the French art of living.
Tell us about the most memorable meal you have ever cooked or eaten.
It was for French President Emmanuel Macron, who I had the honour of cooking for at his nephews’ baptism in the gardens of Château de Chantilly. Cooking for a head of state is always a proud moment.
What is the biggest lesson you’ve learned, in or out of the kitchen?
When I was younger and wanted to get into cookery, a friend of my grandparents, who had three bakeries in the area, told me "If you want to be successful in life, always aim for the maximum to achieve the minimum". That saying still inspires me… I’m not content with limiting myself. Today, as a Chef and father, there’s a quote I like from Oscar Wilde that expresses this same thing beautifully: "Shoot for the moon. Even if you miss it, you will land among the stars". That's pretty good in our line of work!
How important is music in your life?
I listen to music every day; I even sing in my car, as well as in the kitchen. I think all music represents a moment in time, pleasant or otherwise. The same goes for cooking. If a particular dish was good, or even excellent, and you shared it on a special occasion, smelling it again can bring those memories back. It’s known as olfactory memory.
How has the way you cook evolved over the course of your career?
I’m gradually becoming more relaxed, worrying less about what people say. Inevitably, it has had an impact on the way I create recipes, I go straight to the essence.
Where do you feel happiest?
Surrounded by my family and friends, who enjoy eating well and drinking well, beside the sea, with the sun shining and music playing… that's the life!
How would you describe yourself in three words?
Ambitious/sensitive/creative.
If you could cook dinner for any four guests, who would they be?
My wife’s parents and my own… you can never spend enough time with the people you love.
How was your first taste of Krug?
I didn’t expect it to have so many subtleties. Every mouthful is surprising.
What do you like about Krug?
The quality the House reflects. Elegance, refinement, discretion and authenticity. It’s an unpretentious statement of luxury.
