Red Prawns, Garden Flowers & Immortelle Granita

INGREDIENTS

IMMORTELLE GRANITA
2l water
10g fresh immortelle
10g dried immortelle
20g Il Tinello white wine vinegar
40g sugar
4 lime zests


RAW PRAWNS
800g shelled red prawns (approx. 12 prawns)
4g salt
2g pepper
8ml olive oil
4ml Il Tinello white wine vinegar
Aromatic flowers and herbs (immortelle, verbena, lemon balm, savoury, thyme, basil, mint, fennel, oxalis), as needed for garnish

RECIPE DEVELOPMENT

1. IMMORTELLE GRANITA
Bring the water to a boil, then add the vinegar, dried immortelle, lime and sugar. Cover and leave to infuse for 15 mins. Leave to cool, then add fresh immortelle flowers and leaves and store in the freezer.

 

2. PRAWNS
Shell and devein the prawns. Cut them into small cubes, season with salt and pepper and add the olive oil and vinegar.


FINISHING & SERVING INSTRUCTIONS
Place a 7 cm-diameter pastry cutter in a shallow dish. Place the prawns around the edges and add the flowers and herbs in between. In the centre, place a 3 cm-diameter pastry cutter and fill with the granita.
