Three-Onion Dip

I wanted to make something approachable that people could share in a party setting over a glass of Krug. Something to look forward to as when we are able to get together again. The strong onion caramelized flavor and sweetness of the mascarpone plays off of the acidity and brightness of Krug, giving you the option to use the dip for chips, vegetables or whatever you would like.

INGREDIENTS

3 yellow onions

1 bottle champagne 

2tbsp (30g) butter

200g mascarpone

230g creme fraiche

30g shallot, finely chopped

12g chive, finely sliced

26g lemon juice

8g fish sauce

18g salt
 

RECIPE DEVELOPMENT

Step 1

Dice the three yellow onions in preparation to caramelize them.  Place the butter in a large pan over medium-high heat.  Add the onions and stir frequently until they begin to get some color.  Once they start to caramelize, deglaze with some champagne to help soften them and add some sweet champagne flavor. Reduce, let the onions caramelize more and repeat until the onions are well caramelized and dark brown.

Step 2

Mix the onions with all of the other ingredients and serve warm or chilled.
