Jan Hartwig is the chef, patron, and owner of the three-Michelin-starred restaurant JAN*** in Munich, where he crafts a contemporary cuisine that masterfully fuses classic culinary techniques with avant-garde creativity and world-class ingredients. His dishes are renowned for their flawless balance and lasting depth, showcasing a refined play on acidity and texture that elevates every bite. Celebrated for his unique reinterpretations of Germany’s culinary DNA, Hartwig transforms traditional flavours into imaginative new taste experiences. His inspiration is deeply rooted in his childhood in the countryside of Lower Saxony and shaped by the influence of his father—a chef who still runs a tavern with Jan’s mother. This rich personal history imbues his work with a profound sense of individuality. A true connoisseur, Jan Hartwig has been a devoted admirer of Krug Champagne since 2007, when he first encountered it while working as sous-chef at the acclaimed Restaurant Aqua***. 

How would you describe yourself in three words?

Focused, goal-oriented, hardworking

What is your guilty pleasure in life?

I love any kind of ice cream.  

What are your sources of inspiration?

I eat out a lot, talk to other chefs, and constantly try new things. I love travelling and learning, and I always keep my eyes open. 

What is your idea of pleasure?

Quality time with my loved ones, having great food and sharing a bottle of Krug. 

What was the most memorable meal you either cooked or ate?

There are many, but one I will never forget is eating at Sushi Kyota in Tokyo, 2018. 

When was your most recent sip of Krug?

Last week, in my restaurant with special habitués. 

When is your favorite time to enjoy Krug?

The best time for me is for lunch when the sun is shining.
