A word from

Adam Waddell

"Wine is nature’s composition—shaped by soil, sun, and the winemaker’s hand—performed like music, each bottle a curated expression of place, intention, and the earth’s quiet power."

Adam Waddell (Wine Director)

About the Ambassade

In the heart of Manhattan, Eleven Madison Park delivers a fully plant-based tasting menu shaped by Chef Daniel Humm’s minimalist style. With three Michelin stars and a legacy of global accolades, the restaurant focuses on deep sustainability and emotional resonance. Its service philosophy, shaped by leaders like Waddell, transforms fine dining into something intimate, expressive, and human.

About the Krug Lover

Adam Waddell began his life with music - starting violin at four. A move to New York in 2010 sparked an unexpected but profound shift: a passion for wine that eclipsed the concert hall. He refined his palate at top New York City destinations before becoming the first Head Sommelier of SAGA by Jamal James Kent. A Krug Lover for many years, Waddell became Wine Director of Eleven Madison Park in 2025 and leads with an artist’s precision and a storyteller’s soul. To him, wine is a symphony of emotion - composed to elevate and surprise - each bottle a movement in the greater arc of the guest experience.

What role does Music play in your life?

Music has been a constant love in my life for over 30 years. Studying its language - through performance, history, and emotion - has shaped how I move through the world. It taught me to listen closely, to lead with feeling, and to seek beauty in the details. In many ways, being a Wine Director feels like a natural extension of that same rhythm and romance. Fine dining, like music, is about creating moments that linger - elegant, honest, and deeply felt.

Where are you when you feel the happiest?

In the main cellar of Eleven Madison Park, sharing a glass of Krug Grande Cuvée with our guests.

What are your sources of inspiration ?

I find inspiration in many places, but I always return to the farmer. From the vigneron in champagne, coaxing life from the soil, to Maciek Kobielski sowing seeds at Magic Farms for the next Eleven Madison Park menu, their passion and devotion stir something deep within me. Their work is the foundation of everything we do, and I feel a responsibility - and a joy - in sharing their stories with guests through our wine list.

How would you describe yourself in three words?

Authentic. Driven. Formidable.

What is the greatest lesson you have learnt in or outside the kitchen?

When beauty becomes the goal, expression becomes a casualty.

When was your most recent sip of Krug?

I had the privilege of tasting Krug Clos d’Ambonnay 2006 recently, a champagne of gravitas and grace—truly unforgettable.

Can you describe your first sip of Krug?

The first time I tasted Krug was in 2014, while working at a small Swiss-American bistro. A guest brought in a bottle of Krug Grande Cuvée as corkage, and from the very first sip, I was captivated. It was unlike anything I had ever tasted. That moment marked the beginning of a love affair with Krug that has only deepened with time.
