About the Krug Lover

Chef Hubert Wallner, owner of Restaurant Hubert Wallner near Lake Wörthersee, Austria, crafts modern interpretations of traditional Austrian cuisine. Drawing inspiration from Carinthia’s rich culinary heritage, he showcases regional specialties and fresh local ingredients. A passionate Krug Lover, Wallner seamlessly integrates the champagne into his pairings, elevating the dining experience with refined, regional flair. 

How would you define your cooking style? 

Our cuisine combines Mediterranean and Austrian influences. We love working with top-quality regional ingredients. I cook with my homeland in my heart, reinterpreting Austrian dishes with a fresh perspective.

How does the location of your restaurant inspire your cooking? 

As we are located right on Lake Wörthersee, we have access to freshly caught fish. Our restaurant is proud to offer one of the finest fish cuisines in the country.

What was the most important experience you had in or outside the kitchen? 

For us, it doesn't matter who sits down in the restaurant – we cook for everyone as if our guests were part of our family. This makes it easy for us to deliver top performance every day. Happy employees are very important to me, because only those who enjoy their work can give their best every day.

What is your ultimate dream meal? 

Empty plates returning from satisfied guests.

How would you describe yourself in three words? 

Ambitious, Honest, Consistent

What is your favourite Krug food pairing?

There are two. The first is a light fish dish served as a cold appetizer—for example, Wörthersee Reinanke, a delicately flavored lake whitefish, prepared with bay leaf, thyme, hay, and farmhouse yogurt. The second is a fresh, chilled dessert paired with Krug Rosé—a refined take on carrot cake with hazelnut, lemon, pink grapefruit, lemon ice pearls, and lime zest. 

Why do you love Krug? 

For me, everything about Krug is just right – not just the taste, the presentation, and the overall experience, but also the people behind the Maison. They share the same passion that we, as chefs, bring to gastronomy. Once you've developed a taste for it, you can even recognise Krug blindfolded. I feel truly valued as a Krug Ambassade Chef, thanks in no small part to Olivier Krug.
