Who would you like to share your dream dinner with + why ?

Andrew Fairlie. As my mentor and fellow Krug Ambassade Chef, I would love to show him and discuss everything I have achieved since his passing and thank him, over a glass of Krug Grande Cuvée, for all he has done for me and my career.  

What is your greatest achievement?

Earning my first Michelin star in only five months. It had been a dream of mine for a long time, and to achieve it was phenomenal.

Where are you when you feel your happiest ?

When I am with my wife, son, and dogs, out a walk, talking about the nature around us and watching my young son laugh and play. There is no better feeling.

What qualities do you most value in others?

Honesty is always number one, closely followed by kindness, humility, curiosity and resilience.

What are the 3 things you would take to a desert island ?

A knife, a fishing rod, and a bottle of Krug champagne – because if I am stranded, I am doing it in style! I would like to have teabags too. 

When was your last sip of krug ?

It was Krug Clos du Mesnil in the vineyard itself. Pure bliss. 

When is your favourite time to enjoy Krug? 

With great friends and delicious food, usually during a celebratory moment.
