WHAT DOES COOKING MEAN TO YOU?

Cooking is my life. After all these years, I realise it is also freedom because it allows me to be creative. Like music, there are many different genres of cuisine. Today, I teach classes because I enjoy spending time with guests and showing them what happens behind the scenes, so they can understand the craftsmanship involved.

Which person made you love the job?
My mother. When I was growing up, she would always cook simple Spanish dishes for lunch and dinner. Through her, I have learnt that cooking is first and foremost about taste. A dish has to be more than beautiful, it must also have flavour to evoke emotion. Twenty years ago, with trends like molecular cuisine, cooking was more about the show. Today, taste is number one.
What is the greatest lesson you have learnt in the kitchen?
It is impossible to make a plan for creativity. When I look back, I have reached my greatest achievements through passion, commitment to quality and by having a unique style.
What is your earliest memory of an experience with the pepper?
I remember from my childhood how central peppers are in Spanish cooking: from my first spoon of paella to simple tapas enjoyed with friends, the pepper has always been prevalent. Padrón green peppers are very traditional and Chorizo pimento, made from smoked pepper, is found in many Spanish dishes.
Do you remember your first glass of Krug?
I started to drink Krug at least 20 years ago. The first time I tasted it was after a dinner with friends. I remember it vividly because I never drank Champagne before that day but, ever since, I only drink Krug.
