About the Ambassade

Nusara filters classic Thai cuisine through a modern lens in this welcoming heritage space right outside the historic neighbourhood of Tha Tien, next to the royal temple of Wat Pho. Chef Ton and Chef Tam share a passion for food and a commitment to creating a memorable dining experience, while remaining dedicated to sustainability and thoughtful innovation in Thai cuisine. Named in honour of their grandmother, Nusara is a tribute to her memory, a place born from deep love for her and the flavours of Thailand.

How would you describe your culinary philosophy?

Creativity arises organically through interactions with ingredients, the team, and the environment. It is a continuous process fuelled by the dynamic interplay of tradition, innovation, personal memories, and the joy of discovery.

What is your current culinary obsession?

My culinary obsession is acidity. I am constantly trying to find new ways to add that kick to my recipes. Just like good wines, food also needs a touch of acidity.

What is your greatest achievement?

My greatest achievement is to help the local farmers, fishermen and foragers live better lives through the support of my restaurants.

What three things would you take with you on a desert island?

I would bring my mom, my girlfriend, and case of Krug. Three things I love most in life.

Where are you when you feel the happiest?

I feel the happiest when I am surrounded by my family and loved ones, sharing conversations, food, positive vibes and nice bubbles.

What makes you a Krug Lover?

I have to say the generosity of Krug – the maison and the champagne – makes me a Krug Lover.
