How would you describe your culinary philosophy?

Mine is a modern, light kitchen with not-quite ordinary taste combinations. I like to offer my guests new flavours and creations in combination with absolutely the best products in perfect appearance and perfect taste, and thus let my guests forget our normal every day life for a few hours.

Who is your hero? And Why?

Every big-kitchen chef who has his developed their own distinctive style!

What is your idea of pleasure?

To eat and drink with the people that I like to have around me. All the great dishes of the world on a single table... and a lot of time with an empty belly with which to enjoy it all!

What is your greatest extravagance in life?

The time my team surprised me for my 40th birthday:  on our rest day they cooked a special menu in our restaurant just for me and my wife.

If you could prepare a dinner for any four guests who would they be?

My grandma, Josef Viehauser, Mr. Harms and Mr. Kaufmann .... the chefs of my life, I owe them a lot.

What makes you a Krug Lover?

The dishes I cook that I love are like Krug Champagne. They’re truly exceptional and never taste like an everyday unit.

Your first sip of Krug?

I’ll never forget it, it was at a house event  in Hamburg, I must have been about 21 years old. Then I realized that there  were still so many beautiful things to discover in the world .....

Your favourite Krug food pairing?

White truffles with Swiss mountain potatoes, spinach and egg. With it a Grand Cuvée. But I have something to do with Clos d'Ambonnay ... it will be big!
