As Chef and co-owner of Vivant, Johnny pays tribute to the multicultural identity that shapes his culinary philosophy. Born in Lyon to Vietnamese parents, and now based in China for over a decade, he blends classic French culinary traditions with the techniques, ingredients, and spirit of contemporary Chinese culture. His cuisine is a reflection of personal history, cultural exchange, and meaningful encounters with passionate people along the way.

What is the most inspiring experience you had on your journey to becoming a chef?
My encounter with Chef Frank Pelux in 2012 at the 1947 restaurant at Cheval Blanc in Courchevel was a turning point in my career. As a friend and a mentor, he has influenced my perspective of what it is to be a Chef, a business owner and a person. He also showed how to maintain and develop this passion, always striving to offer the best to our guests and those around us.
Can you describe any parallels you see between cooking and Music?
What comes first to mind is the artistic aspect in both cooking and music. It is not only about technical expertise, but also the importance of the emotion we convey. We feed our guests both literally and figuratively – nourishing their imagination just like music does.
If you could prepare a dinner for any four guests who would they be?
Kurt Cobain, Ryuichi Sakamoto, Travis Scott, Raphael Crayton – four artists and personalities I love to listen to and admire.
Who would you like to share your dream dinner with and why?
I would love to have the chance to share a meal one day with Chef Alain Ducasse and get to know someone who has long been a role model to me for his vision.
