How does the location of your restaurant inspire your cooking?
I am influenced by many things: music, architecture, travelling – a good conversation. Anything can spark an idea for a new dish.
What is the greatest lesson you have learnt in or outside the kitchen?
Never give up. Always keep believing in my dream.
What is your ultimate dream meal?
All my dream dishes combine land and sea.
If you could prepare a dinner for any four guests, who would they be?
My deceased father, Joseph Krug, Franz West, and Mick Jagger (this dream has already come true).
