About the Ambassade
De Windmolen was founded out of a love for wine. Located within the historic buildings of Stappato in Eke, it is a place where guests and enthusiasts will find not only fine Burgundies and Champagnes, but also an exquisite selection of traditional Italian wines.
About the Krug Lover
In early 2018, Pieter Verheyde — former sommelier at Hof Van Cleve and owner of Restaurant Terminus (Best Wine List, Gault & Millau 2018) — joined forces with Jeroen Vandensande and Jens Van Vlem, both owners of Stappato, united by a shared belief in bringing people together through a common passion for wine. Through their diverse and open-minded approach to tasting, embracing a wide range of styles, and regularly visiting wine regions, they observed a common thread among their favourite estates: each is rooted in strong family heritage, laced with passion and guided by an unwavering respect for tradition and nature. They make terroir-driven wines with a focus on elegance and finesse, always shared in a spirit of community.
What is your current culinary obsession?
Simplicity. Going back to basics. In Italian cuisine, we say, ‘semplice ma buono’. Less is more!
What is your idea of pleasure?
Enjoying a great meal together with loved ones.
What is the greatest lesson you have learnt in or outside the kitchen?
Stay humble and honest. Keep both feet on the ground.
What is your guilty pleasure in life?
Opening a nice bottle of Krug Grande Cuvée after a long day at work.
What qualities do you value most in another person?
Honesty, candour, open-mindedness, modesty.
