About the Ambassade:

In 2019, Saverio decides to undertake a lifetime project: Ajualä, where he intends to show off the knowledge acquired in his life as a chef and his travels around the world, but especially dedicated to exalting the local product, With a fresh and innovative proposal for the Dominican market, where it combines international techniques with traditional ones.

With Ajualä, Saverio plans to put the Dominican Republic on the international map, being a benchmark for haute cuisine with native products. Ajualä's menu is something out of the ordinary, constantly changing to make the most of seasonal produce.

Its extensive wine list with more than 800 wine labels from around the world has been awarded for consecutive years by Wine Spectator and World of Fine Wines for its variety, design and original proposal, by the restaurant's Wine Manager Thomas Sartori, who is in charge, in a personalized way, of elevating Chef Saverio's preparations to another level with a pairing experience.

What is the greatest lesson you have learnt in or outside the kitchen?

The great sacrifice and daily commitment that you must have with yourself and with your profession in order to reach the goals and dreams that you yourself establish in your personal life.

Who is the person you admire most and why?

At a personal level: Mr Mallén. The investor of my restaurant. For his humility and big contributions to accomplish this dream. 

What is your ultimate dream meal?

Tortellini in Brodo with Parmesan Cheese

How would you describe your culinary philosophy?

The rescue of local products through creative cuisine with European bases and Latin roots, but using modern techniques

Where are you when you feel the happiest?

I love to go find some quiet time at the mountains.

Celebrating the welcome of Ajualä as a Krug Ambassade on a video call with Olivier Krug.

What is your favourite Krug food pairing?

We did a very special pairing for a Krug special event that I would never forget:  Sole fillets in white caviar butter with creamy potato Joel Robouchon style.
