How would you describe your culinary philosophy?
My culinary philosophy is to showcase the best of local Thai ingredients to the world via my cooking techniques and experience.
What is your current culinary obsession?
My culinary obsession is acidity. I always try to find the new ways to add that kick to my recipes. Just like good wines, good foods also need some acidity.
What is your greatest achievement?
My greatest achievement is helping the local farmers, fishermen and foragers live better lives through the support of my restaurants.
Where are you when you feel the happiest?
I feel the happiest when I am surrounded by my family and loved ones – sharing conversation, food, positive vibes and nice bubbles.
What makes you a Krug Lover?
For me, Krug was love at first sight. I have always been a fan of champagne. I explored most of the Champagne region and I always come back to Krug. Krug is elegant, timeless, balanced, (I can go on and on) but most importantly deliciously unique. A sip of Krug is unlike any other.
When was your most recent sip of Krug?
My most recent sip of Krug was after service last night. I was exhausted after a long meeting day and service. I came down to the lounge and sat quietly with a glass of Krug Grande Cuvée in my hand.
