"As a true Krug Ambassade, I see each bottle as a blend of artistry and history—like creating a dish, it’s about balance, passion, and elevating the simplest moments."
Justin Cogley (Chef)

About the Ambassade
Restaurant Aubergine sits in the heart of Carmel-by-the-Sea, a coastal gem on California’s Monterey Peninsula known for its European charm, art galleries, and scenic beauty. This unique setting—where forest meets ocean—inspires a refined, nature-driven dining experience.
Rooted in values of excellence, sustainability, and innovation, Aubergine is dedicated to responsible gastronomy. Chef Justin sources local, seasonal ingredients with care, minimizing environmental impact and honoring the delicate balance of nature—especially the ocean that shapes Carmel’s identity.
About the Krug Lover
Originally from Erie, PA, Chef Justin Cogley brings a rare blend of discipline and artistry to the kitchen, shaped by his early career as an international figure skater in Asia. This global exposure and pursuit of excellence now inform his distinctive culinary style.
Awarded his first Michelin star in 2019—and a second in 2024—Chef Justin is known for his refined approach to California coastal cuisine. His menus spotlight the ocean’s bounty, especially abalone, and weave in bold, balanced Asian flavors with precision and restraint. Guided by a deep respect for ingredients, his cooking favors simplicity and technique, allowing each component to speak for itself.

What is your greatest achievement?
My greatest achievement would be winning a second Michelin star. It’s a recognition not only of the food we create, but the dedication, teamwork, and passion that go into every dish we serve. It is a true honour to be able to push the boundaries of my craft and to have it acknowledged in such a meaningful way.
Where are you when you feel the happiest?
I feel happiest when I see our guests truly enjoying the experience we create for them each night. There’s something incredibly fulfilling about crafting a meal that resonates with people. I also find joy in running through the mountains – where I feel connected to nature and can clear my mind. Both moments, whether in the kitchen or on a trail, remind me of the power of passion, presence, and a deep appreciation for the world around me.
What role does Music play in your life?
Music plays a huge role in my life—it is an essential part of the energy and atmosphere in the kitchen. Growing up in the kitchens of Chicago, we were not allowed to listen to music, but now it is something we do every day. It sets the mood and brings an extra layer of creativity to the work. I am also incredibly proud that Krug has a deep connection to the world of music, aligning with the idea that both food and champagne, like music, elevate the senses and create unforgettable moments.
What qualities do you value most in another person?
The qualities I value most in another person are hard work, a strong work ethic, and a commitment to truth. Dedication and perseverance are key to achieving success in any field, especially in the kitchen. I also deeply respect a strong sense of integrity—being truthful with yourself and others fosters trust and collaboration, which are essential in both personal and professional relationships.
What is your current culinary obsession?
My current culinary obsession is offering and normalizing Champagne pairings for our full tasting menu. Champagne is often seen as a celebratory drink, but it has such a versatile range of flavors that can elevate every course. I’m excited to offer different Krug Champagnes and how they complement and enhance the dishes, creating a more dynamic and memorable dining experience. It’s about showing guests that Champagne isn’t just for special occasions—it’s a perfect companion for every bite.
Why do you love Krug?
I love Krug because it embodies craftsmanship, precision, and artistry in every bottle. The way they blend different reserve wines to create something truly unique is something I deeply admire—it’s a perfect parallel to the way I approach cooking. Krug also has this incredible ability to elevate any moment, turning an ordinary meal into something extraordinary. It’s a Champagne that respects tradition while embracing innovation, which resonates with both my culinary philosophy and personal taste.
When was your most recent sip of Krug?
My most recent sip of Krug was yesterday, during our last Krug event of the year. We enjoyed a Krug Vintage 2003 Jeroboam (3L), which was a truly special experience. The depth and complexity of the wine made for an unforgettable moment, and it was the perfect way to celebrate the year’s final gathering. It’s always a privilege to share such an exceptional Champagne with others who appreciate its legacy as much as I do.
