A talk with Anthony Dánna

Krug Champagne is a testament to the artistry of champagne-making, captivating connoisseurs and enthusiasts alike. Crafted with an unwavering commitment to excellence that spans generations, Krug embodies a symphony of flavors that transcends time and expectation.
Can you describe any parallels you see between cooking and Music?
Cooking and music share parallels that harmonize in a captivating rhythm of creativity and expression. Just as a composer orchestrates melodies and harmonies to evoke emotions, a chef conducts ingredients and techniques to craft flavours that resonate on the palate. In music, notes are the building blocks of compositions, much like ingredients in cooking. The arrangement of these elements can evoke a range of emotions. Finally, timing and precision are crucial in both cooking and music, as both demand an acute sense of balance and finesse to avoid overwhelming the senses.
Where are you when you feel the happiest?
Every November I take a short trip to Paris and it is one of the most treasured things I do every year. Enjoying Krug Champagne amidst the enchanting streets of the City of Light is a symphony of sensory pleasures. It's about celebrating life's finest moments in a setting that exudes romance, culture, and refinement. In this marriage of luxury and ambiance, every sip becomes a harmonious ode to joy, a reminder that life's simplest pleasures can evoke the most profound happiness.
How does the location of your restaurant inspire your cooking?
Balwyn's vibrant community and diverse cultural landscape contribute to Enoteca Boccaccio's culinary journey where the restaurant becomes a bridge between Italy's rich gastronomic heritage and the multicultural tapestry of the area through dishes that resonate with the diverse palates of the Balwyn community. The availability of locally sourced ingredients also has a significant impact on Enoteca Boccaccio's Italian cooking. The proximity to local farmers, markets, and artisanal producers offers the opportunity to celebrate the finest seasonal produce.
Who would you like to share your dream dinner with and why?
My dream dinner would be with former US President Barack Obama as it would be a remarkable opportunity to engage with a visionary leader who has left an indelible mark on history. A dinner conversation could delve into his strategies to promote unity in a complex world and foster constructive dialogue, as well as his vision for a more equitable society. A dinner with Barack Obama would be an intellectually enriching and profoundly inspiring experience, offering insights that extend far beyond the boundaries of politics.
What makes you a Krug Lover?
My unwavering passion for excellence and a profound appreciation for Krug’s art of champagne creation. Krug Grande Cuvée is an embodiment of time-honored traditions, meticulous craftsmanship.
What is your favourite Krug food pairing?
Krug and Enoteca Boccacio’s Cacio Pepe. The creamy richness of this classic Roman pasta dish made with pecorino cheese and black pepper, finds a perfect foil in the crisp freshness and delicate bubbles of Krug Grande Cuvée. The cheese's savory notes and the pasta's silky texture contrast beautifully with the lively effervescence of the champagne, cleansing the palate after each bite and preparing it for the next delectable mouthful. Moreover, the Champagne's complex flavour profile, with layers of fruitiness, toastiness, and minerality, enhances the depth of Cacio e Pepe, creating a dynamic tasting experience where the champagne's intricate nuances interact with the pasta's bold elements.
