A talk with Pierre Chomet

Play, laugh and grow. 
How would you describe your culinary philosophy?
I think our cooking is intuitive. My wife and I love to have fun creating new recipes inspired by our travels, encounters and experiences. Flavours from all over the world blend together in our kitchen, creating an aromatic canvas that tells the story of our adventures and discoveries. This spontaneity combined with our memories allows us to share a little of our travels in every bite.
What are your sources of inspiration?
My main sources of inspiration are my travels, my loved ones and my various professional experiences. I love mixing all these memories, anecdotes, conversations and experiences to fuel my new ideas. The different horizons I have visited have opened my mind, my loved ones have given me warmth and support, while my professional experiences have moulded me and taught me invaluable lessons. It is from this kaleidoscope of experiences that I draw my creativity and inspiration for my projects, giving them life and a unique touch.
What is your greatest achievement?
My greatest success, I think, is my family, and, of course, the Ambos restaurant, which I opened in December 2022 with my wife Cristina. In the end, I am always close to my family, even at work! Every day spent at Ambos is an adventure shared with them, our team and, during the break in the afternoon, with our children.
How would you describe yourself in three words?
It is difficult to talk about oneself in such a way, but I like to think I am open-minded and jovial, but my greatest strength is my curiosity. Above all, I am interested in exploring new ideas and perspectives, but also in meeting people, exchanging ideas in a positive way, and sharing with as many people as possible.
What qualities do you value most in another person?
Subconsciously, I think I like to surround myself with people who are honest, funny and dynamic. Sincerity brings an invaluable authenticity to a discussion, enabling me to build solid, genuine bonds. Humour brightens our days and softens difficult times, making every moment a joyful adventure. Finally, the dynamism of those close to me constantly inspires me to forge ahead energetically and seize every opportunity that comes my way.
Can you describe your first sip of Krug?
I like to enjoy Krug with precious moments, memories I wish to preserve. My last sip… I enjoyed it with my family a few weeks ago.
When is your favourite time to enjoy Krug?
I enjoy Krug Champagne on special occasions. It allows me to celebrate the magic of life's unique and unforgettable moments.
