About the Krug Lover
Gaetan Biesuz, Executive Chef - joined the culinary team of ACCOR luxury hotel group and discovered the world while working at restaurants in the United States, Dubai, Thailand, Malaysia and finally, Indonesia.

How would you describe your culinary philosophy?
My philosophy is to never compromise flavour and the freshness of ingredients for the appearance of the dish.
How would you define your cooking style?
My style is a classic technique whereby I match unique ingredients to delight the palates of my guests.
How does the location of your restaurant inspire your cooking?
Our restaurant seating is mesmerizing with surrounding vegetation and an unmatched view of the ocean, which helps connect all the senses evoked by the menu we are creating. Bali and Indonesia are our main sources of ingredients, to be as responsible and sustainable as possible.
What is your ultimate dream meal?
Very difficult, so many to choose from. Maybe to have a meal at Ell Bulli as I have never been able to try
Where are you when you feel the happiest?
In between the kitchen and the restaurant, the balance between my culinary team and joyful guests is my happiness.
What makes you a Krug Lover?
Krug is an inspiration. I look to the House with admiration and honour Joseph Krug’s vision of uncompromising quality.
What is your favourite Krug food pairing?
At the moment, one of my favourite Krug pairings is Krug Rosé 24ème Édition with braised short ribs sous vide with rendang spice. The fat and spiced balance of the beef wonderfully complement the Krug Rosé.
