WHAT DOES COOKING MEAN TO YOU?

I believe cooking is the constant renewal of ideas and methods to meet the wants and needs of the present world. I am a modernist in the kitchen and do things differently: I create a semblance of linearity to the superficial eye that conceals a whole world to explore.

A talk with Giuseppe Iannotti

I believe cooking is the constant renewal of ideas and methods to meet the wants and needs of the present world.
Which person made you love the job?
I am entirely self-taught. I am very grateful to my family for passing on to me a passion for cooking and a love for our land and traditions, which began when I was six years old. In 2007, I opened a small restaurant in Castelvenere called Krèsios and then a gourmet shop in Telese Terme, which are now together under one farmhouse roof – our family-owned restaurant.
Have you always enjoyed cooking with the pepper?
Absolutely. I think the pepper is an ingredient with an intense and strong flavour that is simple at the same time, characteristics that render it a good representation of me and my philosophy.
Do you know any fun facts about the pepper from your culture?
Leonardo da Vinci used dried and crushed peppers to achieve the bold colours of his Italian frescoes.
Do you remember your first glass of Krug?
I was with my best friend at a beautiful restaurant overlooking the sea when our waiter suggested a bottle of Krug. It was love at first sight and sip, as I was moved by the elegance of Krug Grande Cuvée.
Can you tell us of an unforgettable experience you have had with Krug Grande Cuvée or Krug Rosé?
Krug Encounters this past summer in Portofino was an incredible experience in a magical place. It was an honour to participate in this adventure, which brought me closer to the Krug philosophy and made me feel a symphony of emotions around both Krug Grande Cuvée and Krug Rosé.
