Can you describe any parallels you see between cooking and music?
A chef is a musician. When you can unite so many flavors and ingredients, you create a symphony.
What are your sources of inspiration?
Growing up on a farm, I have always found my inspiration in the seasons, having experienced the four seasons in both France and New York.
How does the location of your restaurant inspire your cooking?
I have created menus for restaurants around the world. While it might be easier to use the same tried-and-true formula for each one, it is critical to cater to the people you will be serving. Nevertheless, I always love to incorporate my French background into my dishes.
What is your greatest achievement?
My greatest achievements would be the work I have done through my charitable ventures like Food1st.
How has the way you cook evolved as your career has progressed?
My cooking has become very light over the years. I am a French man, but not a French man from France anymore, I am a French man from New York – but not an American.
Can you describe your first sip of Krug?
I was at a gala, and Krug Grande Cuvée was served during the toast. The flavors and aromas were so refined, it felt like a celebration in itself!
What is your favorite Krug food pairing?
Krug Grande Cuvée and sushi is my go-to pairing. The champagne's complexity enhances the delicate flavors of the dish, making each bite delightful.
