About the Ambassade

Kevin Toyama, a third-generation Okinawan, began his sommelier career in Hawaii in 1992 and has been a prominent figure in the state’s wine scene ever since. As Wine Manager at Halekulani’s La Mer, he has expanded the wine program by several hundred selections, emphasizing cool-climate wines suitable for Hawaii’s warm environment.

La Mer, situated within the Halekulani Hotel in Waikiki, is Hawaii’s only AAA Five Diamond and Forbes Five-Star restaurant. The restaurant offers Neoclassic French cuisine infused with local Hawaiian ingredients, creating a unique dining experience. With oceanfront views and an extensive wine selection, La Mer epitomizes elegance and has been a staple of fine dining in Honolulu for over three decades.

How would you describe your approach to wine?

I love to play with wine. We decant some of our wines, often four or five times if we have to, to open them up. Sometimes we'll chill a wine to bring out the brightness, or even warm it up. And we'll use an infrared thermal scanner to pinpoint the exact temperature at which the spices start to kick in.

How would you define your wine pairing philosophy?

I always look for a wine that is the perfect fit. I like a bottle that has a je ne sais quoi. I purchase wines for their quality, not for how well they are marketed.

What first drew you to wine?

An unforgettable sip at a family Christmas party made me fall in love with wine and completely shift the course of my career.

How does the location of your restaurant inspire you?

We're located on the beach of Waikiki, so it's a natural place for champagne. It's often the setting of celebratory occasions. I've noticed Krug is a popular choice.

What makes you happiest in your work?

There is no greater reward than seeing a guest's delight when I find their perfect wine pairing. Their satisfaction and enjoyment remind me of the art and passion behind every bottle.
