How would you describe your culinary philosophy?

My culinary philosophy is to evoke the memories of childhood discoveries. I strive to reveal unexpected connections and create new memories.
I believe it is important to understand the natural world around us and to know the local farmers and producers who supply our ingredients.
Our only limits are the natural boundaries imposed by the seasons.

What is the most inspiring experience you had on your journey to becoming a chef?

Definitely cooking at my family home with my mother. It still has a great influence on my cooking today. The menu is inspired by the dishes we used to prepare together, and those memories continue to shape my ideas and creativity.

What are your sources of inspiration?

Apart from the dishes I used to cook at home, my main source of inspiration is southern Polish cuisine, which is extremely versatile and has a rich history that deserves to be celebrated. Another important inspiration comes from the seasons and what they offer -- the natural rhythm of ingredients available at different times of the year.

How would you describe yourself in three words?

Ambitious, persistent, patient.

Integrity, self-awareness, self-reliance

What is your favourite Krug food pairing?

Krug Grande Cuvée paired with my truffle and celery risotto alongside a Polish hard cheese fondue.
