How would you describe your culinary philosophy?
Local, fresh, clean and creative.
What are your sources of inspiration?
Jonathan McManus, Owner: The island of Maui offers many diverse natural wonders to explore – we find inspiration from the sea, our beautiful beaches, bamboo forests, lush waterfalls and amazing hikes. On many occasions the flowers of Maui inspire our pastry team, as an example, the colors and scents transport us and give a sense of place, which is very inspiring.
Derrin Abac, Director of Food & Beverage: with Krug, we mark every occasion as a moment to be remembered. In Hawai'i, the plumeria flower symbolizes love, beauty, romance and the spirit of aloha. They are found throughout our grounds at Hotel Wailea. We oftentimes place a plumeria flower next to the glasses of Krug to illuminate the connection.
What is your favourite Krug food pairing?
Jonathan McManus: Homemade Maui potato chips, miso crème fraîche and caviar with Krug Grande Cuvée 171ème Edition.
Derrin Abac: Krug Rosé 20ème Edition with lightly fried chicken and sweet and sour sauce.
Why do you love Krug?
Jonathan McManus: It’s actually quite primary, Krug makes you “feel.” Your emotions are elevated when enjoying it. As a team we craft guest experiences in a similar fashion. The goal is to have our guests “feel” Hotel Wailea. I love Krug as it’s always so rewarding to see our many guests from around the world feeling so joyful while celebrating each other.
