About the Ambassade

Frog is all about sustainable British luxury, where gastronomy meets performance. Located in Covent Garden, the restaurant offers a fully immersive experience: guests sit facing the open kitchen, chefs engage directly at the table, and every dish tells a story. The tasting menu highlights the very best of the United Kingdom – its farms, fisheries, and local producers – with special attention to seasonality and provenance. The atmosphere blends culinary excellence with genuine comfort, creating a memorable experience where authenticity and refinement are intimately connected.

How would you describe your culinary philosophy ?

My culinary philosophy is simply to create delicious food using the best and most sustainable seasonal produce. I care deeply about creating a relaxed environment in which guests can focus on enjoying their meal. My culinary style is inspired by the vibrancy of Britain and London, but the philosophy that underpins all my restaurants is a fundamental commitment to sustainability. We try to eliminate waste at every possible stage by transforming offcuts or surplus food into innovative new creations.

Can you describe any parallels you see between cooking and Music ?

I build all of my venues on the same four pillars: food, drink, music, and art. While I am proud of our food and wine, I have learned that the atmosphere as a whole is what keeps diners coming back. Just as someone can compose an incredible piece of music that makes you really feel something, I believe a great plate of food can do exactly the same.

How does the location of your restaurant inspire your cooking ?

In terms of flavour, I like to say that my food is inspired by London. It is such a vibrant culture with an incredibly diverse and exciting food scene, and I feel so proud to be a part of it. Each of my restaurants in London reflects the unique culture of its area in London. Frog by Adam Handling in Covent Garden is my flagship restaurant.

What is your ultimate dream meal ?

It would have to be a lobster tart to begin, a beef Wellington with mashed potatoes for my main course, and an apple tarte tatin to finish.

Where are you when you feel the happiest ?

Being a Chef and running my own company means I am constantly busy, but in truth, when you love what you do, every day is fun and it really does not feel like work. I feel so fulfilled and happy being able to do something I am truly passionate about for a living. When I am not cooking, I treasure spending time with family and my son Oliver. He is only one, but I cannot wait until he gets a little older and I can take him with me to enjoy some of the amazing food we have on our doorstep here in London.

What is your favourite Krug food pairing ?

Krug Grande Cuvée with our cheese doughnuts and truffle. I find that the generosity of the champagne works incredibly well with the intensity of the cheese and its complex yeast notes play off the truffle.

Why do you love Krug?

Krug has a wonderful history of quality and individuality that I find truly inspiring. I always enjoy Krug champagnes and had the pleasure of tasting Krug Clos du Mesnil whilst on a trip with the maison in Morocco, along with some exceptional vintages that were all delicious. We also hosted a dinner for Krug in our restaurant where I discovered the rare Krug Clos d'Ambonnay which was a mind-blowing experience.
