About the Krug Lover

Dean Fuerth, a New York native, has led the beverage program at Sushi Nakazawa since 2017, overseeing its Michelin-starred locations in New York City and Washington, D.C., as well as pop-ups in Aspen, Miami, and Los Angeles. Known for his deep knowledge of wine and sake, he curates pairings that enhance the omakase experience. A Krug Lover since his first sip in 2010, Fuerth appreciates Krug Champagne for its complexity and its ability to elevate the dining journey.

How would you describe your culinary philosophy?

My culinary philosophy is to find the most delicious pairing possible, without feeling bound by traditional rules. That said, Krug makes it easy, thanks to its versatility across a wide range of cuisines and flavours!

Where are you when you feel the happiest?

Japan.

What are your sources of inspiration?

My inspiration comes from travel, tasting, and the non-stop energy of New York City.

What was the most memorable meal you either cooked or ate?

There is a long list to draw from, but enjoying Krug Clos d’Ambonnay magnums at the gala dinner in Sweden during the 2024 ambassade trip was especially memorable.

What three things would you take with you on a desert island?

A case of Krug Grande Cuvée 164^ème Édition, a Joseph glass, and a solar-powered wine refrigerator.

When was your most recent sip of Krug?

In service this week, as part of the job is testing every bottle, we open to make sure it is sound and ready to serve.

What is your favourite Krug food pairing?

I’m going to stay on brand here, but Krug and sushi is still king in my opinion.
