How would you describe your culinary philosophy?
My philosophy is rooted in radical honesty and the pursuit of the ultimate flavour. I believe that a chef's work begins years before the fire is lit, starting with the soil and the way an animal is raised. At Roostiq, we strip away the unnecessary to let the purity of the ingredients and the primitive power of the wood-fired oven speak for themselves.
What is your current culinary obsession?
Right now, I am obsessed with the synergy between fire and fermentation, specifically how the precision of a legendary Maison like Krug interacts with the smokiness of our grills. I am constantly searching for that perfect balance where a world-class wine elevates a humble, flame-roasted vegetable from our farm to something extraordinary.
What is the greatest lesson you have learnt in or outside the kitchen?
The greatest lesson is that nature cannot be rushed. Whether you are breeding poultry, raising pigs, or aging a fine vintage, quality requires patience and respect for natural cycles. You cannot shortcut flavour; you have to earn it through dedication and by surrounding yourself with the best possible raw materials.
What is your idea of pleasure?
My idea of pleasure is a table filled with friends in a vibrant atmosphere, sharing a bottle of Krug Grande Cuvée and a platter of our signature farm-raised meats. It is the moment when the simplicity of the fire meets the sophistication of a great wine, creating a genuine connection.
How would you describe yourself in three words?
Passionate, uncompromising, and authentic. I pour my heart into the pursuit of flavour, I never settle for second-best when it comes to my produce, and I believe in staying true to the rustic roots of traditional cooking while embracing the energy of modern Madrid.
What is your favourite Krug food pairing?
I believe Krug Grande Cuvée is the ultimate partner for the fire. My favourite pairing is Roostiq farm-raised chicken or our signature pork cracklings (torreznos). The incredible tension and freshness of the Krug cut through the richness of the meat, while the wine’s toasted notes harmonise beautifully with the smoke from our wood-fired oven. It is a dialogue between rustic fire and liquid gold.
Why do you love Krug?
I love Krug because the Maison shares my obsession with uncompromising craftsmanship. Just as we obsess over the lineage of our animals and the quality of our soil, Krug treats every plot of vines as an individual ingredient. It is a symphony of complexity and generosity.
