The culmination of Chef Saverio Stassi’s lifelong passion, Ajualä puts the Dominican Republic on the international culinary map, creating haute cuisine with local ingredients. About the Krug Lover

In 2019, Chef Saverio embarked on a lifelong project: Ajualä. This restaurant represents the culmination of his journey as a chef and the experiences gained through his travels around the world. Above all, it reflects his passion for celebrating local Dominican products. With Ajualä, Saverio introduces a fresh and innovative vision for the Dominican culinary scene, where international techniques meet time-honored traditions to create a cuisine that is both authentic and forward-thinking.

What is the greatest lesson you have learnt in or outside the kitchen?

The great sacrifice and daily commitment required of yourself and your profession in order to achieve the goals and dreams you set for your personal life.

Who is the person you admire most and why?

On a personal level: Mr Mallén, the investor in my restaurant. I admire him for his humility and his generous contributions that helped turn this dream into reality. 

What is your ultimate dream meal?

Tortellini in brodo with Parmesan cheese.

How would you describe your culinary philosophy?

The celebration of local products through creative cuisine with European foundations and Latin roots, elevated by modern techniques.

Where are you when you feel the happiest?

I love finding quiet time in the mountains.

When was your most recent sip of Krug?

While celebrating Ajualä becoming a Krug Ambassade during a video call with Olivier Krug. 

What is your favourite Krug food pairing?

We created a very special pairing for a Krug event that I will never forget: sole fillets in white caviar butter with creamy potato, prepared in the style of Joël Robuchon.
