About the Ambassade
Le Grand Bellevue, in the heart of Gstaad on the Promenade, is one of the original Big Four luxury hotels in town. After its acquisition by Daniel and Davia Koetser, the hotel underwent a year-long renovation before reopening in 2014. Their efforts transformed the historic establishment, originally built in 1912 as a Cure House and Spa, into a family-owned and managed luxury hotel with 57 rooms that seamlessly blends historic grandeur with contemporary elegance. Home to a Gault&Millau awarded chef, Le Grand Bellevue’s restaurant serves everything from herb-crusted rack of lamb to handcrafted sushi.

Daniel Koetser is the Owner and Managing Director of Le Grand Bellevue in Gstaad, Switzerland. Who is the person you admire most and why?
My wife – because she is amazing and unbelievably patient with me.
What is the greatest lesson you have learnt in or outside the kitchen?
A meticulous, detail-oriented Japanese chef once demonstrated uncompromising perfection and integrity to me. His sound approach to work and life was humbling and inspiring.
What is your ultimate dream meal?
My favourite dish has always been—and will likely always be—Raclette. However, my ultimate dream meal would transcend nations and cuisines, be both opulent and delicate, somehow promote weight loss, and, most importantly, be shared with my wife – and paired with a glass of Krug!
How would you describe yourself in three words?
Alive, passionate, loving.
Where are you when you feel the happiest?
On a mountain or boat, with my family.
What is your favourite Krug food pairing?
A glass of Krug Grande Cuvée with a burger in the cinema, watching Easy Rider during a Harley-Davidson Rally. The contrast of these emotions and flavours highlights the champagne’s stunning versatility.
Why do you love Krug?
When I enjoy a glass of Krug, its generosity and the pairing naturally resonate. But more than that, Krug embodies complex flavours and evokes wholesome memories in a way that few other experiences can.
