Maison Clovis is a refined culinary address in the heart of Lyon’s 6th arrondissement, just steps from the Parc de la Tête d’Or and the Part-Dieu train station. Designed by renowned Lyonnais architect Pierre Chaduc, the restaurant embodies a harmony between contemporary design and environmentally conscious values. Its cuisine reflects a deep-rooted philosophy: to make gastronomic excellence accessible to all, especially those with a humble but discerning appreciation for good food. About the Krug Lover

Chef Clovis Khoury was born in the village of Mechmech, Lebanon, and raised in the historic town of Byblos, where the rituals of cooking were woven into daily family life. He arrived in France at the age of 23 and began his culinary training at 27, working alongside celebrated chefs including Marc Veyrat in Annecy and at La Rotonde in Charbonnières. With the opening of Maison Clovis, he earned a Michelin star within just one year. Today, his cuisine is guided by what he calls “the art of simplicity,” shaped by culture, discipline, and experience. Over time, his admiration for Krug has deepened, mirroring his own dedication to detail, emotion, and excellence. 

How would you define your cooking style?

I have never been able to answer this question, and I am still searching for it! 

Who is the person you admire most and why?

Pierre Gagnaire, for his philosophy, simplicity, and humility. 

What are your sources of inspiration?

Intellectual solitude.

What is the greatest lesson you have learnt in or outside the kitchen?

The removal of my Michelin star.

What is your greatest achievement?

My culture and the luck I have had to be where I am today. 

When was your most recent sip of Krug?

Last week, Krug Grande Cuvée 168ème Édition, in Magnum. 

What is your favourite Krug food pairing?

Krug Grande Cuvée 164ème Édition and a whole 8kg poached turbot.
