About the Ambassade

Lasarte Restaurant is Martín Berasategui’s Krug Ambassade in Barcelona. Opened in 2006, it earned its first Michelin star within a year and, since 2017, has held three – the first in Barcelona to receive this distinction. Led by executive chef Paolo Casagrande, Lasarte blends modern, avant-garde design with an intimate dining experience, including Il Milione, a private space for just eight guests. Its cuisine honours Berasategui’s essence, enriched by Casagrande’s signature touch, balancing ingredients with precision and respect for nature.

About the Krug Lover

Born in Susegana (Treviso, 1979), Paolo Casagrande is an elegant, ambitious chef known for his discipline and precision. After training in top Italian restaurants, he honed his skills in Milan, London, and Paris under Alain Solivérès. In 2003, he joined Martín Berasategui, later helming M.B. in Tenerife (Michelin-starred in 2010) and Lasarte in Barcelona, which earned three stars in 2017. Since 2024, he has overseen Orobianco, a Michelin-starred Italian restaurant in Calpe. His career has been characterised by commitment, passion, consistency, dedication, respect and, of course, a deep connection to his ingredients.

What is your current culinary obsession?

My current culinary obsession is creating moments of pure delight for my guests. I strive to craft dishes that deliver exactly what they crave, yet in a way they never expected. It's about blending technique, creativity, and emotion to surprise and captivate, transforming each bite into an unforgettable experience.

Can you describe any parallels you see between cooking and Music?

Cooking and music share a deep connection—both require passion, precision, and harmony. At Lasarte, our team operates like an orchestra, where each person plays their own instrument. Everyone has their own rhythm, but together, we create a perfect symphony. Just like in music, balance, technique, and emotion transform a dish into an unforgettable experience.

What are your sources of inspiration?

My sources of inspiration are varied and ever-changing. I draw from the ingredients themselves, the rhythm of the seasons, and the aromas that fill the air. Travel also plays a key role, as it exposes me to new flavours and techniques. The team at Lasarte is another incredible source of inspiration—each person brings their own recipes and ideas. I also find inspiration in reading and exploring new market trends, always seeking fresh concepts to incorporate into our creations.

What is your idea of pleasure?

My idea of pleasure is simple yet profound. For me, gastronomy is one of life's greatest pleasures. A great meal, paired with a good drink, shared with family and friends—that’s when time seems to stop. It’s those moments of connection, joy, and indulgence that truly make life memorable.

How has the way you cook evolved as your career has progressed?

As my career has progressed, my cooking style has evolved significantly. Over the years, I have drawn inspiration from many sources, but what increasingly captivates me is how we treat each ingredient and the care we can give it. Additionally, my approach has become lighter, with a greater focus on detail, allowing each dish to express its true essence.

What makes you a Krug Lover?

I am a lover of bubbles. Champagne, to me, is one of the great timeless masterpieces created by humankind. Its complexity, elegance, and the way it brings people together make it truly special. There’s a certain magic in every glass that elevates the experience, and it’s something I deeply appreciate.

Why do you love Krug?

I love Krug because it is synonymous with elegance, finesse, pleasure, and beauty. Served in a hand-blown crystal glass, it becomes one of the most seductive offerings. Each sip is a true celebration of craftsmanship, and the experience is always unforgettable, making it a perfect companion for any special moment.
