French-trained Michelin-starred chef Alexandre Trancher has long admired Krug as the ultimate expression of Champagne. Having worked closely with the House throughout his culinary journey, he views Krug as the crown jewel among great Champagnes. Its fine, persistent bubbles, layered complexity, and seamless balance of richness and finesse reflect the level of artistry and precision he strives to bring to every guest experience at La Mer.

How would you describe your approach to wine?

I love to play with wine. We decant some of our wines, often four or five times if we have to, to open them up. Sometimes we'll chill a wine to bring out the brightness, or even warm it up. And we'll use an infrared thermal scanner to pinpoint the exact temperature at which the spices start to kick in.

How would you define your wine pairing philosophy?

I always look for a wine that is the perfect fit. I like a bottle that has a je ne sais quoi. I purchase wines for their quality, not for how well they are marketed.

What first drew you to wine?

An unforgettable sip at a family Christmas party made me fall in love with wine and completely shift the course of my career.

How does the location of your restaurant inspire you?

We're located on the beach of Waikiki, so it's a natural place for champagne. It's often the setting of celebratory occasions. I've noticed Krug is a popular choice.

What makes you happiest in your work?

There is no greater reward than seeing a guest's delight when I find their perfect wine pairing. Their satisfaction and enjoyment remind me of the art and passion behind every bottle.
