About the Krug Lover

Michael Cimarusti, a New Jersey native, is the chef and co-owner of Providence in Los Angeles. Since opening in 2005, the restaurant has earned three Michelin stars and a Green Star for sustainability. Cimarusti’s cuisine focuses on responsibly sourced seafood, blending classic techniques with modern sensibilities. A Krug Lover since 2023, he appreciates how Krug Champagne complements the nuances of his seafood-driven menu.   

How would you describe your culinary philosophy?  

My culinary philosophy is all about seeking out the very best ingredients and treating them with respect in the kitchen. We aim to serve every dish with grace, kindness, warmth, and genuine hospitality. It's about creating a complete experience for our guests, where sustainability plays an essential role in everything we do. 

What are your sources of inspiration? 

I was inspired early on by fishing with my grandfather on crisp New England mornings and learning about my Italian heritage through the cherished recipes of my grandmother and great-grandmother. 

What is your idea of pleasure? 

I have been fishing even longer than I've been cooking--it is my all-time favourite activity. 

What is your greatest achievement?  

I'd say my greatest achievement is making a difference in ocean conservation and sustainable seafood. I've had a unique opportunity to spread the word about protecting our marine life, and it's empowering to know that I've played a part in keeping our oceans healthy for the future. 

Where are you when you feel the happiest?  

Anywhere along the coast of California. A leisurely drive along Highway 1 is breathtaking. There's nothing like pulling off the road to watch the elephant seals with my kids. It's these simple, scenic moments that bring me the most joy. 

What is your favourite Krug food pairing? 

The first time I had Krug was at a beach bonfire. The contrast of the cool Champagne and the warm fire was unforgettable—refreshing and comforting all at once. It's one of my finest memories. 

Can you describe your first sip of Krug? 

I really enjoy Krug with seafood, especially lobster. The Champagne's elegance complements the sweet, buttery flavors beautifully.  If I could only eat one meal for the rest of my life, it'd be Krug Grand Cuvée and lobster. And what a life that would be!
