Perched on the 18th floor of The Lana, Dorchester Collection, Jara by Martín Berasategui celebrates the chef’s Basque heritage through a family-style dining experience that blends tradition with contemporary finesse. Named after Berasategui’s granddaughter, Jara offers bold flavors, refined craftsmanship, and a warm, convivial atmosphere.

Recently recognized in the Michelin Guide Dubai 2024, Jara brings a unique culinary perspective to Dubai, where Basque traditions meet modern elegance in an unforgettable setting.

In his new role, Bhatia Dheeraj will elevate the dining experience at Jara by curating bespoke Krug pairings that complement the rich flavours of Berasategui's Basque-inspired menu, offering guests a unique journey into the world of exceptional champagne and cuisine.

About the Krug Lover

Head of Wine at The Lana and one of Australia’s top sommeliers, Bhatia Dheeraj, has led award-winning wine programs at Arkhé and Penfolds Magill Estate in Adelaide, curating extensive lists of both local and international wines. His career spans prestigious roles in fine dining globally, from The Peninsula in Hong Kong, Raffles Hotel Singapore to Robuchon au Dôme Macau. He has been recognised with several accolades, including Best Sommelier at the World Gourmet Summit, Singapore, and prestigious Judy hirst award for best wine list, Australia in 2019. Bhatia has been consulting for wine bars in Sydney, Melbourne, and Adelaide. 

Can you describe any parallels you see between cooking and Music?

Both are creative forms of expression combining technique with intuition to evoke emotions. A chef balances flavours and textures, a musician harmonises notes and rhythms. Timing is crucial in both and demands improvisation, where personal style can shine, and rely on practise and precision to master the craft. Ultimately both have the same aim to create memorable sensory experiences for their patrons.

What three things would you take with you on a desert island?

The essentials…. CCW – Cheese, Champagne and Water.

Where are you when you feel the happiest?

Honestly my happiest moments are in a wine region, waking up to serene mornings with birds chirping, strolling through vineyards, having deep conversations with winemakers, immersing myself in the local culture, and savouring the region’s delicacies.

What qualities do you value most in another person?

For me, trust and a good attitude are what define a person. These two qualities, are the foundation of human connection and the essence of how we perceive one another.

How would you describe yourself in three words?

Dreamer, Driven, & Candid.

When is your favourite time to enjoy Krug?

The joy of the occasion pairs perfectly with the elegance and effervescence of each sip at any time of the day. Indulging into gastronomy, celebrating wins or simply celebrating life Krug adds a sense of magic to the moment.

I adore Krug for tis rich history, and exceptional craftsmanship. As Krug Grande Cuvée,  is a blend of over 120 wines from more than 10 different years, it stands as a true connoisseur’s choice. With a reputation for crafting incredibly high-quality champagne year after year, Krug embodies persistence, consistency, and excellence. The reserve wines carefully held back from past vintages add depth to the final creation. Furthermore, tasting older vintages of Krug Clos du Mesnil and Krug Clos d’Ambonnay is an exceptional experience –  for me it is the epitome of precision that has made me fall in love with Krug forever.
