Saint Lucian-born Nina Compton, a Culinary Institute of America graduate, honed her skills under chefs like Daniel Boulud and Scott Conant. Her cuisine fuses French and Italian techniques with Caribbean flavors, reflecting her heritage. In 2018, she won the James Beard Award for Best Chef: South.

Who is the person you admire most, and why?
Leah Chase, the queen of New Orleans cuisine. I have a portrait of her in my kitchen that's very close to my heart.
How does the location of your restaurant inspire your cooking?
I grew up in St. Lucia, and when I came to Louisiana, people told me New Orleans is the northernmost point of the Caribbean. My cuisine puts a stamp on that. The beautiful thing about New Orleans is that you can come as you are and you will be accepted.
What is the greatest lesson you have learnt in or outside the kitchen?
Through cooking, I lend myself to many charities locally and nationally. It is very important to help the younger generations understand the importance of food, whether through cooking, diet, or numerous mentorship programs.
What role does music play in your life?
I cannot live without it! Music sets the tone for my day. Especially reggae. If I am stressed, happy, sad...reggae is always the answer.
Where are you when you feel the happiest?
Growing up in Saint Lucia, my family was always outdoors. We would have breakfast and lunch outside, or a meal as the sun was setting. The kitchen was always busy, but the veranda was even busier.
When was your most recent sip of Krug?
Honestly, my most recent sip of Krug was last night. I love ending the day with a glass of Krug Grande Cuvée – it is my little treat.
What is your favorite Krug food pairing?
Krug Grande Cuvée with chocolate is a surprising favorite. The champagne's complexity complements the rich, sweet flavors beautifully. It is a must try!
