It is unlikely that a nibble on a portobello will provoke the same reaction as the fantastical member of the fungus family that caused the young heroine to spring up like a mushroom in Lewis Carroll’s Alice’s Adventures in Wonderland. Yet the kingdom of fungi’s supposed supernatural powers have, for millennia, fired both mycophobia and mycophilia across the world. No doubt its unconventional habits contributed to its sometimes dubious reputation. In medieval Europe, circles of fungi that sprung up overnight in forest clearings, known as “fairy rings” in English, were thought to play host to elves, pixies and even dragons. In 19th-century America, the unfortunate demise of a mushroom-loving aristocrat after mistakenly picking and preparing a mushroom’s poisonous twin did nothing to help cast off the strange “fruit’s” ill repute, although it did rouse curiosity among the populous who, up till then, had displayed a fairly ambivalent attitude towards fungi.

Today, mushrooms are a firm kitchen favourite and certain enthusiasts will stop at nothing to hunt down a beefy boletus or a fragrant chanterelle when they spring up amid the autumn leaf-fall. In recent years, mushrooms’ popularity has, quite simply, mushroomed with the spread of knowledge from the East about the medicinal properties of certain varieties – 850, to be precise – which range from boosting metabolism to battling cancer.

It was undoubtedly the mushroom’s extraordinary multiplicity and air of mystery that inspired Krug to invite 18 of the world’s finest chefs to conceive dishes inspired by this most curious of nature’s creations. From Forest to Fork, the third in the House’s Krug and the Single Ingredient series, captures their eye-catching, appetite-whetting inventions – all conceived to offer delightful pairing with the House’s most original Champagne, Krug Grande Cuvée. These gastronomic greats, from Krug Ambassades across three continents, took inspiration from the House’s unique approach to Champagne creation, unleashing their imagination on this familiar yet multifaceted single ingredient. For at Krug, the understanding that every plot of vines is, through its wine, a single ingredient in itself is at the heart of the House’s savoir faire. Each one contributes its unique character to the blend of Krug Grande Cuvée, a blend of over 120 wines from more than 10 different years, creating a Champagne that offers beautiful food pairing opportunities, ranging from sophisticated gourmet creations to simple, quality raw ingredients.

And the protean mushroom is no exception. So while it probably won’t help you with your height complex, it does offer a wealth of Champagne pairing possibilities that can transport you to your own particular wonderland…
