There is only one Jereme Leung, and his Ufaa restaurant in the Maldives highlights his distinctive Chinese culinary concept. Ufaa means ‘happiness’ in Maldivian and it is the perfect reflection of Jereme’s personal style. Over the past 30 years, he has opened several restaurants and enjoyed meeting many interesting people in the process. What are your sources of inspiration?
Inspiration to me is all about carefully observing what is happening around you. For example, if you pay close attention to the changing seasons, with each you will witness the arrival of amazing raw ingredients that offer endless opportunities for culinary creation.
Your greatest achievement?
I do not believe I have attained it yet, although I do pride myself on having trained and developed quite a number of outstanding Chinese culinary professionals who are now all excellent executive Chefs across Asia.
What lesson has life taught you?
From my Three on the Bund in Shanghai to the Four Seasons in Singapore, I have found that success always boils down to one thing: perseverance. I believe it is the key to most things in life.
Your ideal moment to enjoy Krug?
A moment that calls for celebration, a moment with good friends, when you’re happy, when it’s raining... Is there any moment that is not ideal for a bottle of Krug?
