Restaurant Parkheuvel** is situated in Rotterdam’s Het Park. The most important thing in Erik Van Loo’s kitchen is the quality. Every flavour they create, every ingredient they use, must be expressed at its best.  

Taste is knowledge, it is a sensation, it is feeling and memory.
How would you describe your culinary philosophy?
Real food, what you see is what you get. As a Chef, you have to be in your kitchen and dive into your dishes. It is like giving a part of yourself away to a guest. I meet a lot of people who want to know the story behind the ingredients. The suppliers we work with for years share this philosophy: taste and quality. Give it time to grow, because with time comes flavour and with the right flavours, we can heighten the quality.
What is your culinary obsession?
White truffles creates such an amazing flavour and can be enjoyed at any time.
Who is your hero, and why?
Toine Hermsen. He taught me to always think ahead. He is like the godfather of Chefs in the Netherlands.
If you could prepare a dinner for any four guests who would they be?
Napoleon, Dalí, Bosch, Romi Janes Dio because these people inspire me. They each have a crazy mind but are also geniuses.
