Sydney’s Quay Restaurant provides a truly memorable dining experience celebrating the diversity of wonderful Australian ingredients cooked with imagination and passion.

I love Krug because you can taste the quality, care and precision with a sense of real balance.
Can you describe yourself in essence?
I am a Chef. I create food that I hope lasts in people’s memories, and I love working with texture and harmony of flavour.
What are your sources of inspiration?
I find inspiration everywhere. Often in the garden and nature, or even in an art gallery; seeing a sculpture or finding a beautiful ceramic bowl – all of these things for me create ideas.
What would be your ultimate dream meal?
Cooking a meal made entirely from products that you have grown yourself would be a fantasy.
With whom would you like to share your dream dinner?
I am not too fussed when it comes to celebrities so I would choose my closest friends and my family.
What has been life’s most important lesson?
Life has taught me that what you put in to it, you will get out of it and that goes for your work as well.
What makes you a Krug Lover?
I love Krug because you can taste the quality, care and precision with a sense of real balance.
