Chef De Cuisine Yuri Liuzzo is a young stalwart of Foxglove’s kitchen. Having trained in Tuscany, Italy Chef Yuri laid his foundation at hotels such as Hotel Villa Cappugi and Hotel Grotte Glusti. Yuri recently moved to Hong Kong to expand his culinary horizon and explore new opportunities in one of the world’s “destination cities”. His ambition is to bring traditional italian cooking techniques to the forefront of Hong Kong’s dining scene.

How would you describe your culinary philosophy?

Our philosophy at Foxglove is to create an experience that pulls the customer back in time. The same is represented with our cuisine. Researching classic recipes to showcase cuisines’ from a specific region and point in time.

What is your culinary obsession?

Our obsession is to rediscover lost recipes and techniques.

What was the most memorable meal you either cooked or ate?

Most recent memory is dining at Lyle’s of London– each dish is so precise and clean, it’s simply incredible!

Which hens lay the most interesting eggs?

The Barred Plymouth Rocks – they lay the biggest eggs!

What does the area that your restaurant is situated in bring to the food you serve?

We’re situated on a historic street of Hong Kong’s busiest business district, Central. This means we cater to the multicultural nature of the city’s residents and try to create an authentic taste to each dish. Many of our customers have had the best carbonara in Rome, or the best burger from New York so it is important to reach those international standards in our kitchen.

If you could sit next to anyone from history at a dinner table and share a glass of Krug, who would that be?

The writer Ernest Hemmingway would be someone who could share a story or two with a glass of Krug.

For you, which musical work best expresses the emotions felt when tasting Krug Grande Cuvée?

Hiromi Uehara’s Spiral truly captures the uplifting feeling of drinking Grande Cuvée.
