IN ESSENCE

NG Wing Shun born in Hong Kong, when he was seventeen, Shun began an access in gourmet food. After this apprenticeship, he began work at Brown’s wine bar in central. Shun first position as Sous Chef came in 1999 at Restaurant Petrus, Island Shangri-La hotel. Ten year later, In 2009 Ng Wing Shun opened Amuse Bouche restaurant in Wan Chai, Hong Kong. He delighted to showcase the essence of French cuisine using the freshest ingredients and unique cooking method.

How would you describe your culinary philosophy?

I would say my culinary philosophy is to just flow with my instinct. After so many years of working in the kitchen, I know my gut is what I should trust most.

What is your culinary obsession?

To be very honest, I’m obsessed with our client’s feedback.  Not only the ingredients are important, a perfect dining experience comes with good service too. I like to collect feedback from my customers, not only on the food that I make but also on the service provided by our team.

What was the most memorable meal you either cooked or ate?

We regularly have customers coming in and asking for specific dishes they have tried overseas. There is one guest in particular, who requested a chilled angel hair topped with caviar that he had tried in Singapore. Inspired by the client’s description and his passion for the dish, I replicated it…and he loved it! He has been returning occasionally to share this very dish with friends ever since.

Which hens lay the most interesting eggs?

Pheasants:  they lay green and blue eggs. 

What does the area that your restaurant is situated in bring to the food you serve?

Our restaurant is very close to the two big wet markets in Wan Chai. Every morning before work, I go there and select the freshest vegetables and seafood I can find.

If you could sit next to anyone from history at a dinner table and share a glass of Krug, who would that be?

That could only be someone who is close to my heart- so, either my family or my girlfriend.
