Born and raised in Italy, Gabriele realized his passion for cooking at a young age. After graduating with Catering-Hotel Diploma in Italy, he started his culinary adventures around the European capitals to permeate his talent and cultivate his mind and hands. He got the opportunities to work in the kitchens of notable Michelin-starred restaurants, including Galvin at Window in London, Tailleventin Paris and Restaurante Lasarte in Barcelona. His philosophy focuses on perseverance and seriousness in front of the work: respect for the kitchen, never get tired of learning.

How would you describe your culinary philosophy?

I would describe it as a Mediterranean point of view with international influences. I firmly believe in seasonality – and let the market and seasonal products dictate what I purchase and create.              

What is your culinary obsession?

I am obsessed with doing better every day and moving on without resting.

What was the most memorable meal you either cooked or ate?

Eating at Ryugin in Tokyo after having completed my work experience there in 2010 was an utterly unforgettable moment.

Which hens lay the most interesting eggs?

I would say Paolo Parisi’s, the Italian egg Guru.

What does the area that your restaurant is situated in bring to the food you serve?

Our location in Sheung Wan and the Centre is marked by a strong presence of expats and locals who have been very exposed to the western culture. It works very well with our cuisine since they are the best clients to understand its origins and approve of its authenticity. The artistic ambience surrounding our location in PMQ always inspires us to serve beautifully styled dishes.

If you could sit next to anyone from history at a dinner table and share a glass of Krug, who would that be?
