The concept behind the dish

While growing up in Barcelona I was lucky enough to have access to a plethora of fantastic ingredients to experiment with and also different classic and modern cullinary techniques I was able to pick up from my own country of Spain and surrounding regions like the South of France. The traditional French dish, ‘Morilles à la Crème’ was the inspiration for this dish. I utilized all the traditional ingredients in this recipe and added modern cuisines techniques while paying homage and respecting the traditional flavours of this classic dish. The reason I choice Morels for this dish, was that this is a unique and prized ingredient in Spanish and French cuisine, which can only be harvested in the best months of March to May, which make them so rare and sought after.

Rich, complex but delicate, is what defines a glass of Krug Grande cuvee. Our dish consists of rich, complex but delicate flavours which pairs so well with a glass of Krug Grande Cuvee.. The richness of the Foie Gras with the delicacy of the morels as result we have perfect balance between rich, complex but delicate flavours.
