Akrame Benallal

Born in France in 1981, Akrame Benallal spent the first thirteen year of his life in Algeria, in Oranais. After the sudden departure of his father, he learned to get by on his own and decided very quickly that he wanted to be a cook. After spending time working and learning alongside Pierre Gagnaire and then Ferran Adrià, he invested in Lauriston Street with the opening of the restaurant bearing his name in April 2011. The restaurant went on to earn a Michelin star within one year of opening and Two Michelin stars 3 years later. He then opened his first meat and potatoes concept restaurant in Paris in 2012 and now has 3 in Paris alone, all earning the title in the Michelin Guide as Bib Gourmand restaurants. restaurant Akrame HK opened its doors in Nov 2013 on Ship Street as Akrame Benallal’s first restaurant outside France and earning one michelin star within one year of opening as well. Chef Akrame has now opened 3 Atelier Vivanda's worldwide, with locations in Hong Kong, Baku, and Manila with many more to come.

How would you describe your culinary philosophy?

“Un état d'esprit" means  a state of mind. This has been my punchline ever since I started to cook.

What is your culinary obsession?


What was the most memorable meal you either cooked or ate?

The meal at Paul Bocuse’s, our master’s, restaurant.

Which hens lay the most interesting eggs?

Geese. Their eggs have a very pleasant texture and particular taste, much smoother and more intense than chicken eggs.

What does the area that your restaurant is situated in bring to the food you serve?

I always adapt the products I use depending on the places I cook in. It’s really important to me to use local produce in order to guarantee maximum freshness. This way, the food I cook changes depending on the locations. People are different all over the world, and I feel very strongly about adapting my cuisine to the palate of my customers.

If you could sit next to anyone from history at a dinner table and share a glass of Krug, who would that be?
