Auguste Escoffier once said: “Good food is the foundation of genuine happiness”. Where did your passion for cooking originate? Have you all always understood that food would be part of your future?

It is in my blood! Seventy years ago my grandfather opened Syokudoen in Osaka, recognised as the first yakiniku (grilled meat) place in Japan. My parents also had a beautiful restaurant in Seoul – I suppose because of this I have always dreamed of opening my own restaurant.

A chef ’s heritage definitely influences their cuisine, but where else do you find inspiration for your work?

 I find culinary inspiration in almost everything, from music and art to conversations with my friends. Also, I try to experience as many dishes as possible, in all the myriad of forms, styles and regions. I have found that more experiences pays off in more new ideas.

Asia is very much considered a mycophilic region and eating fungi is engrained in the customs and rituals of its people. Can you remember your earliest memory of eating mushrooms?

I loved raw foods as a kid. I preferred even to eat mush-rooms that way, tearing by hand and chewing them raw. I do not recall at what age I ate mushrooms but I know it was much earlier than my friends
