Cooking on the bone for both meat and fish. Why? Because it is with this method the product best expresses its flavour.

Your first sip of Krug?

My first glass of Krug came quite late in life. That evening we tasted Krug. Wow. The complexity, harmony, commitment and fun we had with the customers and the satisfaction of a job well done after a tough shift was somehow distilled into a single glass. It was huge! In short, we finished late that night.

The most memorable meal you either cooked or ate?

That is a difficult question to answer. I do not have just one memorable meal but several. Always surrounded by my family and friends, in restaurants or at home, but always with quality products, great wine on the table and the roar of laughter.

How do you like your eggs?

To distraction and passionately.

And finally… Which came first? The chicken or the egg?

The hen, the egg, the hen, the egg, the hen, the egg. Argh! Ok, I would say the hen.
