Le Grand Bellevue re-launched in January 2014 after a year-long renovation by dynamic young owners, Daniel and Davia Koetser. In the heart of Gstaad village, the hotel was originally built in 1912 as a Cure House and Spa. Family-owned, managed and designed, the hotel comprises 57 bedrooms. Bold colours, eye-catching prints and elegant furniture make up the interiors. The hotel’s signature restaurant LEONARD’s offers exceptional Michelin-starred cuisine by Executive Chef Marcus G. Lindner .

I like the sparkling, aromatic experience of Krug Champagne. Krug attaches great importance to heritage and rightly relies on tradition. This contrast with my kitchen is highly inspiring to me.

What are your sources of inspiration?

For me, it always begins with the individual product. I am interested in how it is sourced, what it looks, feels, tastes and smells like. These incredibly diverse, distinct tastes are just waiting to be matched and brought together. Many ideas for combinations occur outside of the kitchen. I am very much inspired by the natural landscape of the Bernese Oberland region around Le Grand Bellevue when hiking or running for example.

What is your idea of pleasure?

I take pleasure and fulfilment in everything I decide to do. I think it's the personal attitude to life that's decisive. I enjoy leaving my comfort zone, and I find that challenges can also be fun. For me, though, the greatest enrichments, which allow me to broaden my horizons, are also travels, good conversations with friends and everyday life experiences with my son.

What is your ultimate dream meal?

Opposites attract. To me, that is much more than just a statement. I love extremes, and accordingly, so are my ultimate favourite dishes. For a starter, the firm meat with the subtle taste of  St. Pierre, opposed to the delicate, yet intense, fried fois gras combined with the fresh acidity of rhubarb and earthy hazelnut. After that, char, spicy, crispy grilled suckling pig paired with the sweetness of apple and the sharpness of horseradish. That's when I start to swoon.

What is your greatest extravagance in life?

I find it difficult to define extravagance, because it’s actually something that you don’t need. I'm careful not to waste anything, whether it's food or time. Nothing tires me more than constantly going with the flow. I value difference, going against norms and conventions. Maybe that’s my extravagance.

What is most valuable to you?

I really value that my profession is also my greatest passion, and that I can share it with people. However, apart from work, for me the time I can spend with good friends is invaluable.

What makes you a Krug Lover?

I discovered Champagne for myself just a few years ago. I like the sparkling, aromatic experience of Krug Champagne. Krug attaches great importance to heritage and rightly relies on tradition. This contrast with my kitchen is highly inspiring to me.

Can you describe your first sip of Krug?

Krug’s invitation to the Wasserngrat mountain, one of the Saveurs Gstaad events, where Krug Vintage champagne was served as an accompaniment to a five-course menu, was an unforgettable experience for me.

What is your favourite Krug food pairing?

If I'm honest, I enjoy Krug whenever I feel like it, the unique thing about good champagne is that it always fits everything.

What is your ideal moment to drink Krug?

It's always the right moment, for me Krug is an expression of joie de vivre and spontaneity.
