How would you describe your culinary philosophy?

A multi-sensory experience based around heritage and technique.

What is your culinary obsession?

Deconstructing traditional recipes from my Chinese heritage.

Describe the human quality you value most highly?

Integrity is the quality I value most. I am a student of H.E. 25th Tsem Tulku Rinpoche, one of the greatest living Buddhist teachers of our time. I translate this quality into my food and my environment. As a chef we need to pay homage to mother earth. She provides us with an abundance of life, so we must respect her bounties.

How does the location of your restaurant inspire your cooking?

In Kuala Lumpur, we have access to amazing indigenous herbs, plants and seeds and a diversity of cultures that allows us to lay claim to being the original fusion cuisine. I try to harness these ingredients, ideas and influences in my cooking.

What was the most memorable meal you either cooked or ate?

It was for my uncle four years ago. He requested a simple fried egg on rice, sunny side up, and it was one of his last meals before passing on. He told me it was the best egg he had ever had; his smile was what made it all the more valuable and rewarding.

Which hens lay the best eggs?

Organic, free-range village hens. In Malaysia, we call them ayam kampung, it literary means village chicken. The eggs are smaller with light brown shells. The yolks are mandarin yellow and the albumen is tight and extra viscous. Rich yet light when consumed, beautiful!

The chicken or the egg?
