His passion for gastronomy has taken him around the world and today back to his native Puerto Rico where his passion for locally source ingredients combined with unique simplicity and refinement are a perfect soulmate for Krug.

I am inspired by many things, among them my surroundings, travelling, history and tradition.

How would you describe your culinary philosophy? 

Our emphasis is on the freshness and purity of our ingredients as we seek to capture the highest level of flavor. When we prepare the ingredients used for each dish, the intention is to bring out the flavor in a very focused way.  We look for clarity in taste and presentation as well as selecting ingredients that offer a high level of nutrition.

What are your sources of inspiration?

I am inspired by many things, among them my surroundings, travelling, history and tradition.

Who is your hero? And why:

Alain Ducasse and his empire. If you want to become a great chef, you have to work with great chefs. And that's exactly what I did.

What is your idea of pleasure ?

 I enjoy running and the beach !

Who would you share your dream dinner with?

With my daughter (she is in the same profession) and the people from whom I learned my craft such as Sylvain Portay, Alain Ducasse and Santi Santamaria. I would also invite the farmer who will grow the produce for that dinner.

Your favorite Krug food pairing?

Everything!!!  As Napoleon Bonaparte said of Champagne: “ in victory one deserves it, in defeat one needs it.”

What makes you a Krug Lover?

"Krug creates only Prestige Champagnes, it is a statement of the utmost quality and that’s the same level that I look for in my ingredients.
