I like to travel and I always take new ideas and new flavours from wherever I go to give a twist to my dishes.

What are your sources of inspiration?
All the recipes and techniques I’ve learned in the past find their origins in French cuisine, which is always the foundation of my dishes. Also, I like to travel and I always take new ideas and new flavours from wherever I go to give a twist to my dishes., making them fresher, more interesting. The twist can be the ingredients but also new skills that I discover in other countries.

Wine dinners are also one of the biggest part of my inspiration because you need to think a lot to find the right pairing and every time I need to create a new recipe.
What is your idea of pleasure?
My idea of pleasure as a chef is sharing. Of course, I love food and wine. It is maybe the simplest thing in life but I believe this is what give you some of your greatest pleasure and it is even better when you share it with your friends and family. When I create a dish I always hope that people will enjoy it as much as I do, which is why I am happy to share first with my team and then with our guests.
What is your ultimate dream meal?
My ultimate dream meal would be just one plate where the dish is at once a starter, a main course and a dessert. Like a full tasting menu in one.

What is your greatest extravagance in life?
Renting a boat during my holidays to sail between small islands and crystalline blue water, jumping from the boat and enjoying food, stopping on a deserted beach and preparing a barbecue while watching the sunset.

What is your ideal moment to drink Krug:
I like to drink Krug for special occasions, such as birthdays. The last time was for my birthday and it was a pleasure to go home late at night after a hard day and share a bottle with some friends.
I think krug is best enjoyed during a relaxing moment so that you can take the time to appreciate.
